Raw Kelp Noodles Review - Kelp Salad


A friend gave me some 100% raw kelp noodles and I must say they are very delicious.  At first, I was skeptical about trying them, because they looked strange, but I am glad I gave them a try.

Finally, I get to try another noodle besides using zucchini as a noodle substitute.  It was a great experience to switch up and try something new.

I made the most delicious kelp noodle salad and I just couldn't keep it to myself.  I hope you try kelp noodles along with my recipe. 

What is kelp?

Kelp is a sea vegetable (seaweed, brown algae) that can be found in shallow oceans all over the world.  You can purchase kelp in health food stores, but make sure you always purchase organic sea vegetables.

In-Depth Nutritional Profile for Sea vegetables 
    A few kelp benefits

    •  Promotes healthy thyroid function (good iodine source)
    • Rich in folate which is known to help prevent cardiovascular disease and birth defects
    • Boosts the immune system
    • Helps with inflammation 
    **Sea vegetables have great benefits, but always remember to eat these in moderation.**

     Preparing kelp noodles

    1.  Rinse kelp noodles very well.
    2.  Soak noodles in warm water and lemon juice for at least 30 minutes.  Soaking helps soften the noodles so that you will not experience eating rubbery noodles. Soak according to texture that you like.
    2.  Prepare your dressing and the fixings for the salad, while noodles are soaking.
    3.  Cut kelp noodles to the length you desire.


      Sweet Mustard Dressing

      I altered Jennifer Cornbleet's (Raw Food Made Easy for 1 or 2 People) recipe for sweet mustard dressing by using dates.  I prepared the dates by soaking them and blending them with the soak water in the Vita-Mix. 

      1/2 cup extra-virgin olive oil
      1/4 cup apple cider vinegar or lemon juice
      1 tablespoon of Dijon mustard
      4 teaspoons of date sauce or to taste (recipe calls for 2 teaspoons of honey or agave nectar) 
      1/4 teaspoon of salt plus 1/8 teaspoon of salt
      1/2 teaspoon of crushed garlic (1 clove )
      a dash of black pepper
      a dash of cayenne pepper

      Blend all ingredients until smooth and creamy.  Store in a cruet or glass jar in the refrigerator.  Sweet Mustard Dressing will keep for one week.  Enjoy!

      Evelyn's Kelp Salad

      kelp noodles
      a few slivers of kombu (soak kombu), species of kelp
      carrots
      cucumbers
      sun dried tomatoes
      add the date mustard dressing and mix well



      This salad is so delicious.  Adding sun dried tomatoes really enhanced the flavors. While eating the kelp noodles, I thought I was eating spaghetti noodles.  The great thing about kelp noodles is that they taste good and they are good for you.

      I recently talked to my mother in law about getting some of those - we call them seamoss over here. Still working on getting some. It is used to make a drink called the same name - seamoss but I'm going to try it raw as well as research other dishes.

      LOVE kelp noodles. They're so versatile and they really satisfy my urge when I want some pasta. I call them Mermaid Pasta. :D

      Fruitful! Thanks you! Sea moss drink..sounds interesting. I know it is packed we a lot minerals and nutrients..good for the body. :)
